Female Chefs Delight Tourists With Afrocentric Dishes At Dubai Expo 2020

French-born chef, Glory Kabe, and Senegal-born United States of America-based chef, Mame Sow, have been exciting the taste buds of tourists in the United Arab Emirates with Afrocentric delicacies at the ongoing Expo 2020.

Chef Kabe made history as the first chef to introduce Afro-vegan food to Dubai at the ongoing event to the delight of the vegetarian community in that region. She is also hosting a 10-day pop-up in the Middle East’s first Vegan Food Festival as part of activities of the Expo 2020 Dubai.

In an interview with Merrymakers, Kabe said, “When I was living in Brazil, I fell in love with Afro-Brazilian food and decided to become a chef. I had the chance to sit down and take the time to think about what I like and what I want, and cooking was number one on my list, so I made it happen. My passion drives me to be dedicated to this and no obstacle can be put in my way. This is what I have always wanted to do, and I taught myself. I am not afraid of getting out of my comfort zone or starting over should the need arise.

Chef Sow, who is also showcasing the beauty of Africa through her dishes at the event, told Merrymakers that she had always loved cooking. She said, “I have always loved cooking but it wasn’t until I got into high school that I realised I could make it a profession. I then decided to immerse myself into learning more and practising. I am a natural-born cook. Speaking on the inspiration behind her dishes, she said, “The inspiration behind my signature desserts is to always showcase Africa beautifully and all the boundless and amazing ingredients she has to offer.”

Originally scheduled for between October 20, 2020 and April 10, 2021, the expo was postponed due to the COVID-19 pandemic. It was eventually opened on September 30, 2021.
